Marvellous

Instone Court, HR7 4JS
A quick view of hop picking here at Instone, this week we have been picking Goldings.
Our team are amazing, Ionuts and the field crew are in charge of pulling the bines and delivering them to the machine.
Magda, Ramona and Marian hang the hops to feed into the machine.
The hops are plucked from the bines and then separated from the leaves through a series of conveyors.
The picked hops are taken up into the kilns to be laid out level on the kilns by the talented Iulian
After drying they are cooled for a day and then Adrian (aka the bee man) packs them into pockets ready to go to the merchant.
I should probably mention Catalin who keeps the old and clunky machine running like a dream.
Its a little different to the days of the bushel but we think its magical all the same.

Many castles around this area - border country as we are**GLORIOUS GOODRICH CASTLE**

#Herefordshire has 130 castles one of which is Goodrich Castle, a now ruinous Norman medieval castle. It stands in open beautiful countryside above the River Wye and is one of the most preserved of all English medieval castles. The views from the battlements are just delightful and you can see why William Wordsworth referred to it as the "noblest ruin in Herefordshire". Within the castle sits 'Roaring Meg' a powerful cannon that brought about the demise of this wonderful building in 1646. A hidden gem is the deep water well in the centre of the castle, thought to descend three times the height of the castle keep providing a crucial water supply during the Civil War. A superb attraction and a great day out, step back in time and discover the history of Herefordshire

We seem to be a wood pecker haven here. New noisy green ( breeding pairs 52k in UK) and having analysed the tapping sounds - I have reason to believe our red guys are lesser spotted ( 1 - 2k breeding pairs) as opposed to greater spotted - 140k pairs. Even at those larger numbers, compared to us human lumpies - circa 65 million in the UK........what can I say....something is wrong!! ...

This is Wickton sour dough!We know that it can be a pain for our wholesale customers to have to order two and a half days in advance for sourdough loaves. But these beauties were mixed, bulk fermented, stretched, folded, scaled, shaped and then retarded yesterday. The sourdough culture that makes them rise and gives them the amazing, complex flavour was refreshed the day before, and now they are heading for the oven. We do this so that we can call it a true Sourdough, with no added yeast, no shortcuts, no additives, no preservatives or “flavour enhancers”. It will keep for at least two weeks, have a deep and complex flavour and be easily digestible even for those who find industrial bread hard to stomach. Just yesterday we heard about another local baker who makes his “sourdough “ with added commercial yeast just so he can have the flexibility of making and baking in one day.
